The restaurant business---any service business, in fact---is a hard one for a perfectionist, because they're a human-powered organization. And, no matter how hard they try, humans make mistakes.

 

레스토랑 업은---여느 다른 분야들과 마찬가지로, 사실 완벽하기 어렵다. 이는 인적자원에 기반한 조직이기 때문이다. 아무리 노력한다고 해도, 인간은 실수하기 마련이다.

 

-외식산업은 인력에 기반해 운영된다. 결국 사람 장사라고 말들 한다. 실수의 순간에 어떻게 대처할 것인가에 대한 방법론 또한 개인에게 달려있다. 생산과 서비스가 동시에 이뤄지며 고객의 피드백 또한 굉장히 빠르다 (사람들은 음식을 먹자마자, 서비스를 받자마자 즉각 좋음과 나쁨을 구분할 수 있다). 매 상황에 유연하게 대처할 수 있어야 한다고 늘 들어왔다. 파인다이닝이 아니라면 서빙봇을 쓰면 어떨까. 점점 서빙봇을 많이 쓰고 있는 추세이긴 하다. 어느 칼럼에서, 앞으로 더 고급 레스토랑일수록 로봇보다 사람을 쓸 거라는 예측을 했다. 이는 당연하게도 로봇이 줄 수 없는 서비스가 존재한다는 것이다.

모든 원리는 당신이 자전거 타는 능력을 습득하는 모든 과정을 분석&분해 한다는 생각으로부터 비롯된다. 각각의 부분을 1% 정도 향상할 수 있다면, 그리고 당신이 각각의 향상된 부분을 합친다면, 당신은 상당한 발전을 할 수 있을 것이다.

 

-개인마다 능력치가 다르다. 각 부분들을 세세히 나누고 그것들 각각의 발전과 성장을 위해 조금씩 나아간다면 결국 어떤것이든 성취할 수 있다고 믿는다. 새해 들어 영어공부를 더 해야겠다는 생각이 들었다. 이를 나눠보면 읽기, 쓰기, 말하기, 듣기로 분류해 볼 수 있는데, 저자가 말한 것처럼, 각각 1%의 성취가 결국 큰 차이를 만들어 내리라 믿는다. 2023년은 더 재치 있고 유창한 영어 구사를 위해 많은 시간을 보내야지 또 다짐한다.
